Join popular food writer and Community Kitchen favourite Lerato Umah-Shaylor for a vibrant celebration of Nigerian cuisine, where bold flavors and cherished traditions come together in an unforgettable feast. In this hands-on class, you’ll learn to create some of Nigeria’s most loved dishes—recipes filled with greens, vegetables, and pulses that have been passed down through generations.

The Menu

  • Akara Fritters – Traditionally made with black-eyed beans, but we’ll use lentils for a quicker, equally delicious take on this West African favourite, also beloved in Brazil.
  • Roasted Chilli Sauce – A fiery blend of scotch bonnets, red peppers, lemongrass, and more.
  • Braised Greens with Peppers & Toasted Pumpkin Seeds – A deeply nourishing dish, inspired by the meals Lerato cooked for her grandmother.
  • Roasted Plantains – Sweet, caramelized plantains, a beloved Nigerian staple.
  • Nigerian Roasted Chicken Stew – A one-pot wonder featuring succulent roast chicken in a rich tomato sauce, perfect with everything from rice to bread.
