The Brighton & Hove Food Partnership's Community Kitchen is a cookery school where everyone can cook, learn new skills and enjoy food with others. We want everyone to experience the benefits of cooking and eating together. By paying for a cookery class, you help other people to attend cookery activities, regardless of finance, confidence or ability, and to make lasting changes to their lives.
Description
Join private chef Eloise and learn the secrets to restaurant quality sauces while enjoying an evening of delicious food.
Explore three distinct sauce families: rich reductions, aromatic herb-based sauces, and indulgent butter-based sauces.
These versatile sauces are perfect for impressing guests at dinner parties or elevating your weeknight meals. Through a combination of cooking and demos Eloise will show you the secrets to perfect flavour combinations and essential techniques.
You will work in pairs and the class will cover the following sauces and dishes::
- Learn how to transform the foundations of mire poix and stocks into rich and flavourful sauces such as peppercorn and red wine jus. Paired with either beef or lamb depending on local availability.
- Fresh and flavourful chimichurri and salsa verde accompanied by crushed new potatoes.
- Buttery and satisfying beurre noisette/blanc served with seasonal greens.
