Join us for a celebration of the essence of summer, featuring a pescatarian midsummer produce focused 5-course tasting.
Here's what the chef shared about this tasting:
This holler tasting menu is pescatarian focused, celebrating local midsummer produce provided by nearby farms and gardening co-ops as well as freshly sourced fish and crustaceans. We're still leaning pretty heavy into our exploration of koji, and for this dinner we'll be bringing koji into a variety of Southern contexts by using barley koji and heirloom corn kojis grown for us by local fungi master, the @fungiist to produce koji cultured butter, koji cultured buttermilk, and powdered koji fry dredge. We have been having an absolutely amazing time experimenting with this ancient fungus that has historically provided so much depth of flavor to dishes from Southeastern to far Eastern Asia, and we're very excited to share it with yall. As far as produce we'll be playing with some of our favorite local midsummer veggies like corn, tomato, eggplant, okra, and watermelon.
