The Brighton & Hove Food Partnership's Community Kitchen is a cookery school where everyone can cook, learn new skills and enjoy food with others. We want everyone to experience the benefits of cooking and eating together. By paying for a cookery class, you help other people to attend cookery activities, regardless of finance, confidence or ability, and to make lasting changes to their lives.
Description
In this class, Sophie of SuperDoux vegan catering shares her tried and tested recipes for essential dishes that you will cook again and again. She is passionate about veganising dishes with an emphasis on creativity and understanding flavours and textures.
If you are trying out a vegan diet yourself, or cooking for vegan friends or family, this class will give you the skills you need to improve your repertoire of delicious plant-based meals. Learn the secret to three essential flavours - creamy, savoury/ umami and seafood - all of which are deliciously vegan.
The menu includes two special vegan ingredients - jackfruit and banana blossom. These ingredients have become popular in recent years but work best if you know how to get the best out of them. During the lesson you will work in pairs to create:
- A starter of traditional English 'fishcakes' made with banana blossom and served with a vegan lemon mayo - learn vegan tips & techniques for replicating classic seafood flavours
- Jackfruit 'brisket' - a richly flavoured dish with savoury, umami flavourings which you will want to use in a range of other vegan dishes
- Served with a classic macaroni & cheese - with a surprisingly creamy vegan cheese sauce. This traditional bechamel sauce could also be used for for cauliflower cheese, lasagne and more.
